CHICKEN AND FRUIT SALAD WITH POPPY SEED DRESSING

Leftover rotisserie chicken breast or baked chicken works well in this salad. Chill all
fruit before assembling and serve with warm croissants. It is easy to double this
recipe if you are serving a large group.

2 cups cubed cooked chicken breast
1 large peach, peeled and cut into chunks
1¹/2 cups pineapple chunks, drained
2 bananas, sliced
¹/2 cup chopped celery
3 tablespoons chopped walnuts (optional) Poppy Seed Dressing (recipe follows)
4 large lettuce leaves

In a medium bowl, combine the chicken, fruit, celery, and walnuts. Mix with the
dressing and serve on 4 lettuce-lined plates.

Makes 4 servings

POPPY SEED DRESSING

¹/4 cup mayonnaise
2 tablespoons nonfat plain yogurt
1 tablespoon honey
¹/2 teaspoon poppy seeds
¹/4 teaspoon salt

Makes about ¹/2 cup
